This soup is a great way to use up leftover vegetables. You can also add other vegetables, such as potatoes, zucchini, or squash. If you want to add protein, you can add cooked chicken, tofu, or lentils. It is also a good source of fibre protein, and iron. It is a healthy and affordable meal that is perfect for people on a budget.

Ingredients:

  • 1 tablespoon olive oil

  • 1 onion, chopped

  • 2 carrots, chopped

  • 2 celery stalks, chopped

  • 1 teaspoon minced garlic

  • 6 cups vegetable broth

  • 1 can of chickpeas

  • 1 (14.5 ounce) can diced tomatoes, undrained

  • 1 (15 ounce) can black beans, rinsed and drained

  • 1 (15 ounce) can corn, drained

  • 1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry

  • 1 teaspoon dried oregano

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

Instructions:

  1. Heat the olive oil in a large pot over medium heat. Add the onion, carrots, and celery and cook until softened, about 5 minutes.

  2. Add the garlic and cook for 1 minute more.

  3. Add the vegetable broth, diced tomatoes, black beans, corn, spinach, oregano, salt, and pepper. Bring to a boil, then reduce heat and simmer for 15 minutes, or until the vegetables are tender.

  4. Serve hot.
